A few months ago I decided to venture out of my food comfort zone and throw a package of cold smoked salmon in my grocery cart. Nathan looked at me a little leery. I've been known to throw healthy ingredients into our dinners and surprise him after the fact to prove to him healthy can be tasty. I've won him over a few times, but quinoa always still seems to stop him in his tracks. After assuring him I wouldn't sneak the salmon into a meal we moved on down the aisle.
I normally would have never been so brave, but a weekend spent in Chicago pushed me out of my grocery routine and has since made this ingredient a staple for me in my weekly meals. It's no surprise our food inspiration always strikes in the windy city. We've posted about it here too. During a recent weekend trip to Chitown, Nathan and I ate at a delicious sub shop downtown and we both walked away with meals we wanted to recreate. Nathan's sub is one he now makes on the regular. It came on a pretzel bun and if that was delicious enough, it also had apple slices on it. Random, but seriously that crunch and added sweetness is so bomb. My sub had a delicious cream cheese spread and smoked salmon combination on it that was to die for. Nathan even took a bite and liked it. Shocker!
I've since been buying smoked salmon regularly at Aldi's. It can be found in the cold section by the lunch meat. The added smokey flavor really gives it a great taste. I love adding it atop two runny eggs and a slice of toast on Saturday mornings. I've been wanting to find a way to mix it into a healthy lunch or post workout snack now that I'm back in school and packing meals like a crazy person.

You've heard us talk about staying away from dairy regularly on this blog. For me, it's a choice that would be hard for me to go back on. There's so many amazing nut milks, dairy-free cheeses, vegan butters, and now dairy-free cream cheese that I truly don't miss it. Daiya came out with a chive and onion, dairy-free, cream cheese that's insanely good. I knew it'd be the perfect partner to my smoked salmon. These would also be amazing as an appetizer at a cocktail party! The possibilities are endless.
Smoked Salmon Roll Ups

Spices of your choosing
1. Thinly slice your cucumbers into long strips. If they're too thick they won't roll easily, so make them as thin as possible. I used a knife, but a larger sized peeler would work nicely too.
2. Place a layer of cream cheese onto the cucumber. Although it's exactly the same texture as regular cream cheese, it did not spread so easily, so if it looks messy just remember you're going to roll it up.
3. Take a few small slices of smoked salmon and season them. I'd definitely at least do a little salt and pepper. I have this bomb seasoning that Cat got me that goes great on fish, so I used a little of that. You could even use a little garlic powder. Whatever you like, add it in. Then place your smoked salmon atop the cream cheese.
4. Lastly, sprinkle the top with some fresh dill. Roll that baby up and use a toothpick to hold in place! It's that simple. The flavors are so bomb and it couldn't be any easier to make!
