When I moved to Michigan last spring I was worried about two things - finding a gym and finding healthy food. In Denver, it's no surprise that there was no shortage of healthy (and vegetarian) options on every corner. Lauren had told me about Fresh Thyme coming to South Bend and it sounded very similar to a store I always shopped at in Denver, Sprouts. Lucky for me there is a Fresh Thyme down the street from my apartment and is one of the many reasons I'm obsessed with my little town. For the record I'm also obsessed with my gym so Michigan and I are getting along just fine.
In true RG fashion we don't like anything that's overcomplicated or too expensive and this dinner is about as healthy and easy as it comes. It's three ingredients, takes about ten minutes to make and costs under ten dollars. Yes, you heard us right.
1. Go to Fresh Thyme and find this tuna poke. It's with all the fresh seafood, behind the counter. If they don't have it out just ask because it's probably frozen in the back. The kind gentlemen at the seafood counter may or may not know me by name now. There's already sauce on the tuna so this is the best part. I get the mild which is very spicy for mild. The only other things you need are a head of broccoli and this Seeds of Change rice.
2. Cook your broccoli first. Chop it up and sauté on the stove in some coconut oil and season with salt and pepper. After about five to seven minutes throw in this package of rice. It's already cooked and ready to eat, it just needs to be heated up. I love this flavor of rice because it's vegetarian but they have several options and they are all organic.
3. Throw some of this tuna on the plate and you're done. Yes, it's that easy! Sometimes I'll sear the tuna a little bit and mix it in with the rice and broccoli but it's sushi grade so it doesn't need to be cooked.
I brought this to Lauren's with me in December when we were working on all of our Be You Campaign stuff one weekend and now she is obsessed. Even Nathan who doesn't love fish liked it. So you HAVE to give it a try. I shared this meal with my rad friends Michael and Danielle in exchange for these photos. Not sure who got the better end of the deal but now they're obsessed with it too!
If you don't have a Fresh Thyme in your area get adventurous and try something new. Whole Foods and Sprouts both have a bomb fresh fish selection and you could substitute any kind of ahi tuna for this tuna poke. I'd been going to Fresh Thyme for almost six months before I discovered this because I always just bought the same things. Live on the edge, change it up!
I always say there's truly no excuse not to make a healthy choice and this is a bomb example of something that's cheap, easy and good for you. Best dessert choice, Halo Top which is not pictured because we devoured it too quickly.
