I first made this breakfast over two years ago and kind of forgot about it. I recently got a group of girls together for a workout and brunch (is there anything better?!) and was trying to think of something healthy to make for our post-workout breakfast. I then remembered this yummy little breakfast bowl and that I had been wanting to blog about it. Everyone was asking me for the recipe, so here it is!
Four - Six Eggs
Handful of Spinach
One sweet potato
Makes two bowls
- Get the sweet potatoes cooking first. Cut up the sweet potato and cook over medium heat and coconut oil. Make sure the bottom of the pan is covered in oil and cover the pan so the potatoes cook quicker. It'll take them a good ten to fifteen minutes to become soft. Make sure to add salt and pepper. While the potatoes are cooking start the eggs.
- I say the more protein the better so I always do three eggs. Cook your eggs on lower heat so they aren't done too soon. Cut up your avocado at this time as well.
- Once your potatoes start to get soft throw in the spinach with the potatoes. Once the spinach is soft you're ready to build your bowl!
- Layer the potatoes and spinach, half of an avocado, eggs and top with salsa verde! The sweet potato and avocado definitely make enough for two bowls so share with your friend or lover!
